400 gr string beans
300 gr cherry tomatoes
50 gr sugar
120 gr feta cheese, crumbled into small pieces
30 gr toasted pine nuts
60 gr olive oil
50 gr Orange & Lemon white balsamic cream Kalamata Papadimitriou
Freshly ground pepper
On a chopping board using a sharp knife, halve the cherry tomatoes; spread them out on a non-stick baking tray. Drizzle some olive oil, sprinkle with sugar, salt and freshly ground pepper.
Place the baking tray in a pre-heated oven at 180οC for 25 minutes.
While the cherry tomatoes are in the oven, trim the string beans, cutting off their top and bottom and boil them in a pot of salted water for 7-8 minutes.
When the string beans are ready, remove from the pot and immerse them in a bowl with ice-cold water; this will cool them down quickly and bring out their naturally bright colour.
When the cherry tomatoes are ready, remove from the oven; add two thirds of the tomatoes in the food processor together with the olive oil, the orange & lemon white balsamic cream, salt and freshly ground pepper. Pulse until you get a thick dressing.
Add the string beans in a bowl, pour the dressing over them, mix thoroughly and serve on large individual plates.
Top with the remaining roasted cherry tomatoes, feta cheese and toasted pine nuts and serve.
