Salad with Spicy Papadimitriou Vinaigrette



3 bunches arugula
20 cherry tomatoes cut in 4
1 large cucumber, diced
200gr feta cheese, cubed
10 tablespoons olive oil
2 tablespoons Kalamata Balsamic Vinegar
1 dessert spoon Spicy Kalamata Mustard
Freshly ground pepper


Mix mustard and vinegar in a bowl and season with salt and pepper. Next add the olive oil and mix with a fork until well incorporated. In another both mix the arugula torn into small pieces with the cherry tomatoes, cucumber and the feta, and pour over the Spicy Papadimitriou Mustard vinaigrette. Toss well and serve individually in deep dishes.
