500 gr white cabbage
1 carrot, grated
1 Roasting Pimento (red pepper, Florina type), cut in julienne strips
80 gr baby rocket
20 slices of salami, cut into thin sticks
For the dressing:
120 ml olive oil
30 ml lemon juice
4 tbsp orange – lemon balsamic cream Kalamata Papadimitriou
3 tbso mustard with thyme honey Kalamata Papadimitriou
½ clove of garlic, finely chopped
Freshly ground pepper
In a small bowl, combine all the dressing ingredients: the olive oil, lemon juice, orange – lemon balsamic cream, mustard with thyme honey, finely chopped garlic, salt and freshly ground pepper and whisk thoroughly.
On a cutting board using a sharp knife, finely chop the cabbage and transfer to a bowl, adding the grated carrot and the julienned red pepper.
Pour the dressing into the bowl with the cabbage, mix thoroughly, cover and leave in the fridge to marinate for at least 30 minutes.
Take the bowl out of the fridge, add the baby rocket and the salami sticks, mix well and serve.
