2 cups chicken breast fillet, cooked and cut into small pieces.
1-2 green apples, seeded and finely sliced with their peel on
1 cup celery, finely chopped
½ cup walnuts, finely chopped
½ cup dried cranberries
½ cup mayonnaise
2 tbsp yogurt
2 tbsp mustard with honey (squeeze) Kalamata Papadimitriou
2 tsp lemon juice
1/8 tsp salt
4 sandwich rolls with black sesame seeds
In a bowl put the chicken pieces, the apples, the celery, the walnuts, the celery, the dried cranberries, the mayonnaise, yogurt, mustard with honey, lemon juice and the salt. Mix thoroughly to combine the ingredients until you have a homogeneous mixture.
Split the rolls in the middle and fill them with the Waldorf salad.
Serve as open sandwiches with the lettuce leaves.
