1 rooster cut into pieces
2 yellow onions, chopped
3 garlic cloves, chopped
2 teaspoons ground allspice or 10 pieces whole allspice
2 cups pearl onions
¼ cup Kalamata White Balsamic Vinegar “Kalamata Papadimitriou”
Tomato sauce with olives
2 cups red wine
1/3 cup Kalamata Extra Virgin Olive Oil Tin
salt & pepper
red pepper flakes to taste
1 package Hilopites egg pasta “776”
In large sauce pan or dutch oven, over medium high heat sear rooster pieces in olive oil. Season with salt and pepper, add onions, garlic, bay leaves, all spice, pearl onions, balsamic vinegar and tomato paste. Stir well, add the red wine, stir and cover to cook until the rooster is fork tender.
Cook noodles according to directions.
Drain and add some of the braising liquid from the noodles for flavor.
Stir and transfer to serving platter.
Add rooster and sauce.
Top with a bit more olive oil and grated graviera cheese ,and red pepper flakes if desired.
