Salmon with sweet potatoes

Cooking time: 10 minutes
For 4 persons


4 fresh salmon steaks or fillets
4 orange sweet potatoes
3 tablespoons olive oil
freshly ground pepper
Kalamata Balsamic Cream to serve
A little fresh oregano


Wash the potatoes, but do not peel. Wrap each one separately in foil. Roast in the oven for about 30 minutes at about 180o (350oF) until soft. Heat the olive oil in a large non-stick frying pan. Season the salmon with salt and pepper and fry for 3 minutes on each side. Plate each dish with one piece of salmon, one sweet potato cut into 4, and drizzle the Kalamata Balsamic Cream over both. Add a few sprigs of fresh oregano.
