Coconut Waffles with Caramelized Sour Cherries

For the waffle:
50 gr oat flakes (ground in the food processor into a powder-like consistency)
25 gr grated coconut
2 eggs
2 tbsp sugar
1/2 tsp baking powder
2-3 tbsp milk
a generous pinch of salt
2 tbsp coconut oil

For the caramelized sour cherries:
200 gr sour cherries (you may also use cherries, forest berries or frozen berries of your choice)
2 tbsp Fig Balsamic Cream, Kalamata Papadimitriou

For the cheese cream for the garnish:
1 tbps sour cream (alternatively you may use cream cheese with a few drops of lemon juice)
100 ml whipping cream (35% fat)
2 tbsp sugar
a few drops of vanilla extract.

Beat the eggs with the sugar. Add the coconut oil, the ground oat flakes, grated coconut, baking powder, salt and milk; mix thoroughly. Bake in a buttered waffle-maker for about 5 minutes (do not open in the first few minutes).
In a saucepan, heat up the sour cherries together with the Fig Balsamic Cream until they thicken and caramelize.
To make the cheese cream, beat the sour cream with the whipping cream, sugar and vanilla extract in the mixer until fluffy.
Serve the waffles with the cheese cream and the caramelized sour cherries.
