Tropical Salad with Mascarpone, Walnuts, Honey and Pomegranate Balsamic Cream

Ingredients

2 oranges
1 grapefruit
2 bananas
1 ripe kiwi
1 pomegranate
1 star fruit (optional; you may use another seasonal fruit)

For the dressing
4 tbsp Pomegranate Balsamic Cream Kalamata Papadimitriou
1 tbsp lemon juice
2 tbsp honey
A pinch of ginger powder

For the cream:
200 gr mascarpone cheese
2 tbsp sour cream
2 tbsp honey

For the nuts:
2 tbsp sugar
100 gr walnut kernels

Preparation:
Peel the oranges, grapefruits, bananas and kiwis. Slice the fruit.
Cut and deseed the pomegranate, keeping the seeds in a bowl.
Wash and slice the star fruit so that the stars are visible on each slice.
For the dressing, mix the Pomegranate Balsamic Cream, lemon juice and ginger thoroughly in a bowl.
In a large bowl, add the pieces of fruit and add the dressing.
To make the cream, in another bowl add the mascarpone cheese, the sour cream and the honey. Mix well and let the mixture sit in the fridge for a while.
In a frying pan add the sugar with very little water; when hot, add the walnuts and stir with a wooden spoon until they caramelize.
Add some spoonfuls of the mascarpone mixture in the bowl with the fruits and dressing; top with the caramelized walnuts.
