Spring salad with mastic and pomegranate

Balsamic Vinegar Honey

Ingredients

2 ounces baby spinach
2 ounces mesclun mix
1 medium tomato diced
¼cup crumbled manouri cheese
3 tablespoons pomegranate seeds

Vinaigrette:

9 tablespoons Kalamata Extra Virgin Olive Oil
3 tablespoons Balsamic Vinegar with natural honey “Kalamata Papadimitriou
1 tablespoon Natural Mastiha pieces from Chios island, ground
Hand-picked sea salt from Crete
pepper to taste

Instructions

Vinaigrette:

In a dressing bottle or jar with lid, add the olive oil, vinegar, mastic and salt & pepper. Shake well and set aside

Salad:
In a large, wide serving bowl combine the spinach, mesclun mix and diced tomato. Top with the crumbled manouri cheese and pomegranate seeds.
Drizzle with dressing and enjoy!
