2 tbsp extra virgin olive oil
Black pepper, freshly ground
1/2 medium sized melon, sliced
85 gr prosciutto, sliced
225 gr fresh mozzarella, in chunks
1 tbsp balsamic cream Kalamata Papadimitriou
Mint leaves for the garnish
In a large bowl add 2 tbsp of olive oil, salt and pepper; mix with a balloon whisk.
Add the melon slices and the mozzarella chunks; toss gently until they have been coated with the olive oil.
Divide the melon and mozzarella on 4 individual plates and place the prosciutto on top.
Drizzle with the balsamic cream, garnish with mint leaves and serve.
