Chickpeas with Octopus and Pomegranate Balsamic Cream

INGREDIENTS

1200 gr octopus
3 cups chickpeas, soaked overnight.
1 large onion, finely chopped
1 carrot, cut into cubes
2 tbsp coriander
4 cloves garlic
200 ml white dry wine
Salt, to taste
Pepper, to taste
4-5 tbsp Pomegranate Balsamic Cream with Stevia* Kalamata Papadimitriou
½ cup olive oil

PREPARATION
Preheat the oven at 180ο C.
Wash and cut the octopus into pieces.
Place the octopus pieces in a large oven proof dish, add the onion, carrot, coriander, garlic, wine, salt and pepper and mix well.
Transfer the oven proof dish into the pre-heated oven and gently bake for 60 minutes.
Strain the chickpeas, put them in a pot with salted boiling water and boil for approximately 40-50 minutes until tender but not mushy.
Strain the chickpeas and transfer them to the oven proof dish with the octopus.
Add the Pomegranate Balsamic Cream with stevia* and the olive oil.
Put the oven proof dish back in the oven and bake for about 40-50 minutes until the sauce in the food has thickened nicely.
